Chicken or Fish Marinade
½ cup Olive oil 1 cup dry white wine Juice of 2 lemons Zest of a lemon 4 garlic cloves, roughly chopped Pinch of red pepper flakes Kosher salt and freshly ground pepper to taste
Combine all ingredients. Let sit for 30 minutes. Taste and adjust seasonings. Pour over chicken pieces or fish. Marinate refrigerated and covered for 30 minutes (no longer or the meat will become mushy). Grill immediately.
